Welsh Rarebit

Adapted from an episode of Better Beerfood.  If you would like to view the episode, click here.  It’s sort of like cheese on toast, but not as boring, not to mention it has beer in it.  My mother used to make something like this when I was growing up.  Welsh Rarebit has always reminded me of cold nights in my childhood, this was always comforting.


16 oz grated cheddar cheese

butter and flour for roux

1 tbsp. Dijon mustard

1 bottle of Pale Ale

1/4 cup heavy cream

salt and pepper

Worcestershire sauce

slices of Texas Toast

Welsh Rarebit Preparation

Prepare the roux by melting the butter and then coating the flour in the melted butter.

Whisk in the mustard and Worcestershire sauce.

Add the beer and cook until thickened. While whisking add the cream.

Slowly add the grated cheese.

Stir until the cheese is melted and the sauce is smooth.

Toast the bread.

Pour the sauce over the bread.
