Bison Chili Con Carne
This is a recipe pulled out of my personal archives. This recipe was adapted from an episode of Better Beerfood. You can see the episode by clicking here. Bison is a good alternative to beef if you’re watching your weight.
1 lb. ground bison/buffalo
1 large onion, chopped
several cloves of garlic
assorted hot peppers, chopped
1 diced tomato
1 bottle of beer
salt and pepper
Bison Chili Preparation
Brown the meat on high heat. Remove and then sweat the onion and peppers, making sure the caramelized meat juices come up from the bottom of the pan or pot.
Return meat to the pot.
Add the cumin, chili powder, tomatoes, and beer.
Bring to a boil then reduce to a simmer. Stir in the tomato paste.
Add the oregano and garlic toward the end. Season to taste.
